Some of plum varieties can be dried in dehydrators or in the sun without resulting in fermentation. Those varieties usually have firm flesh and contain high levels of sugar. Some of plum varieties are sold fresh and
called fresh prunes, but majority of them are dried and consumed during the winter, when the fresh plums are not available.

The plum is a stone fruit, which means its flesh surrounds a single seed protected with pit. Plum with pit which separates easily from the flesh is known as freestone variety and plum with pit firmly attached to the
