Making your own silky tomato soup is so quick, easy and perfect for any time of the year, a soup with a plum tomatoes like no other you've had before.

4 large ripe tomatoes, chopped
1 tbsp olive oil
2 medium onions
2 cups chicken stock
2 cloves of garlic, finely chopped
Salt and freshly ground black pepper to taste
2 bay leaf

In a large pan, over medium heat add a couple of lugs of olive oil, tomatoes, carrots, onions, garlic, bay leaf and mix them together with a wooden spoon, add the chicken broth and bring to a boil. Cook for about 20 minutes, and season with sugar, salt and pepper to taste.
