This beautiful, light and refreshing cabbage salad is a perfect balance of sweet and savory, soft and crunchy, and a new favorite in our home.

3 cups thinly sliced cabbage
2 carrots, shredded
2 tsp extra-virgin olive oil
2 tsp sesame seeds
3 tbsp fresh lemon juice
Salt and ground pepper to taste

Toast sesame seeds until golden brown. In a medium bowl put the cabbage, carrots, olive oil and lemon juice. Toss gently to combine. Top with the toasted sesame seeds, salt and ground pepper.
