Healthy ginger and carrot soup recipe

This beautiful and delicious, low fat ginger soup is a healthy and absolutely lovely lunch or dinner and can also calm an upset stomach or boost your immune system.

2 tbsp olive oil
1 onion, peeled and chopped
2 garlic cloves, sliced
1 pound carrots, peeled and grated
3 cups chicken or vegetable stock
2 tbsp grated fresh ginger
1 cup whipping cream
Salt and freshly ground black pepper

Heat the olive oil in a large pan over medium heat, add the onion, garlic and ginger. Reduce heat to medium-low and cook for about 10 minutes or until onion is soft. Pour in the chicken or vegetable stock and carrots and simmer, partially covered, for about 30 minutes. Process mixture using blender until smooth. Season to taste with salt and freshly ground black pepper. Pour soup into bowls and top with whipping cream.
