Healthy and tasty ginger potato recipe

Perfect ginger potato combination, interesting and fresh taste of plain potato, hot from the oven and distinctive aroma of ginger.

2 large potato
1/4 cup butter
2 tbsp ginger, grated
4 cloves of garlic
1 small tomato, sliced
1 small onion, sliced into rings
Salt and pepper to taste

Wash potatoes and cut them in half by longer side. Rub salt into cut surface and roast in oven preheated on 400F (210C) for about 30 minutes or until middle of potatoes get soft enough so it can be spooned. Spoon the inside of the potato, mix it with the butter, garlic, ginger, salt if needed and pepper and fill up potatoes again. Return to the oven for about 20 more minutes. Serve warm with tomato and onions.
