
Healthy homemade potato soup recipe

I have been a fan of this classic easy to make yummy potato soup for as long as I can remember. So delicious and healthy.

2 tbsp olive oil
1 pound bacon, diced
1 cup chopped onion
3 cloves garlic, minced
3 pounds baking potatoes, peeled and cubed
4 cup chicken stock, or vegetable stock
1 cup heavy cream

Add olive oil and bacon to a large stockpot over medium-high heat and cook until crisp. Add the onion, garlic and continue cooking for 1 to 2 minutes until almost tender. Add the chicken stock or vegetable one with potatoes and bring to a simmer, reduce heat and cook about 10 minutes and stirring occasionally so that the bottom does not burn. Add heavy cream, salt and freshly ground black pepper to taste.
