2 cups leeks, sliced
2 cups potatoes, peeled and diced
1 medium onion, chopped
1 carrot, chopped
2 cloves garlic
6 cups chicken stock
1 cup heavy cream
2 tsp olive oil
Salt and freshly ground black pepper

Heat the olive oil over medium heat in a large pot and add the garlic, carrot, onion, potatoes and leeks. Cook and stir frequently for about 5 minutes until starting to soften. Add the chicken stock and bring to the boil. Season with salt and freshly ground black pepper. Pour in the heavy cream, reduce heat and simmer for about 30 minutes. Taste and adjust seasoning if desired. Puree the soup with a blender until smooth. Serve immediately, or chill and serve cold.
