1 cup butter

1 tbsp olive oil

3 onions, sliced

1 garlic clove, chopped

1/2 tsp dried thyme

Salt and ground pepper to taste

4 cups chicken stock

1 bay leaf

2 bread slices

2 hard cheese slices

Melt butter with the olive oil on medium heat, add the onions and garlic and cook until softened, add the chicken stock, thyme and bay leaf, add the salt and pepper to taste and simmer for about 25 minutes. Pour the soup into heatproof bowls with the toasted bread and one slice of hard cheese. Grill until melted.
