A smooth zucchini soup is easy to make and tastes like it's full of cream. This delicious soup is a great way to get kids to eat more vegetables and my family have been enjoying eating this easy soup for a years.

3 zucchinis, grated

1 onion, finely chopped

2 garlic cloves, chopped

2 tbsp extra virgin olive oil

2 tbsp butter

2 potatoes, peeled and diced

4 cups water

1 tsp curry powder

Salt and black pepper to taste

Heat extra virgin olive oil in a medium saucepan add the butter and melt. Add the onions, garlic and curry, stir and cook for a minute or so until starting to turn golden and soft. Add the grated zucchini, potatoes, salt and freshly ground pepper, reduce to medium heat, and cook, stir occasionally, 5 minutes. Add the water and bring to a boil, reduce the heat and simmer until tender, about 15 minutes.
