
Delicious redcurrant yogurt cakes recipe

This delicious, sweet currant yogurt cake is easy to make. Can be served with addition of fresh currants or whipped cream, or whatever your imagination brings you.

1 cup fresh red currants
1 tbsp plain yogurt
1 tbsp organic honey
1 large egg
1 tbsp butter, melted
1/2 cup plain flour
1 tsp baking powder
Pinch of salt
1/4 lemon, zest

Whisk the egg, yogurt, sugar and butter together. Add the flour with baking powder, salt and lemon zest and fold all in the batter. Pour into prepared molds, muffin molds or mini shapes of any kind. On top of each add a tablespoon of fresh red currants. Bake in oven preheated to 350F (220C).
